Simple Sugar Free Pickled Red Onions

What you’ll need:
1 large red onion
1 1/2 cups water
1 cup white vinegar
2 bay leaves
3 garlic cloves sliced thin
1/4 tsp Pepper

1. Peel and slice your onion into thin strips. Separate them and place in a large jar.
2. Over a medium heat, pour the vinegar, pepper, bay leaves and water into a small pot.
3. Once the mixture has boiled, pour it into the jar with the onions. Add the garlic.
4. Let the jar cool in room temperature for 2 hours. Refrigerate and enjoy all week!
