Simple & Delicious Cauliflower Rice

What you’ll need:
2 tbsp Earth Balance butter
1 tbsp thyme (dry or fresh)
Half a cauliflower head
Salt & pepper

1. If you need to make your cauliflower rice – slice the cauliflower head and use the knife to remove to florets. Steam the florets until they are soft. Once they are ready (you can poke a fork into them to check), put them in a food processor and blend until you get the consistency you like.
2. Take your ‘rice’ out of the food processor and into a bowl. Add the Earth Balance, thyme, salt and pepper to taste. If the cauliflower isn’t hot enough and the butter won’t melt, you can cook it on a low heat.
