Enjoy this ricotta with crackers, on a cheese plate, or in my lasagna recipe!
Ingredients:
1 cup soaked cashews (in water, either overnight, or for at least 1 hour. If you forget, soak them in boiling hot water for 5 minutes)
1/3 cup water
Juice from 1 large lemon
1 small garlic clove
1/2 tsp onion powder
Pinch of salt
Instructions
Put all of the ingredients in a blender and mix until the consistency is smooth and ricotta like.
