
If it wasn’t for tofu scramble, could I really give up eggs? Of course. But damn does this recipe make it so much easier!!! A MUST for this recipe is black salt. That will really be what will give you that eggy flavor, so I highly recommend it. I made this recipe for two, but if you’re making this for one person just cut the ingredients in half 🙂

Ingredients:
Half a block of smashed tofu (you can break the tofu up with your hands)
4 sliced mushrooms
2 cups spinach
1/2 tsp turmeric
1/2 tsp paprika
1/4 tsp salt
1/4 tsp black pepper
Pinch of black sat
1/2 tbsp olive oil
Instructions:
1. Start by heating up a pan with the olive oil on a medium heat. After two minutes you can add the tofu, remember to break it up well with your hands or a fork.
2. Add the sliced mushrooms and all the spices. Start mixing everything on the pan with a wooden spoon.
3. Once everything is covered in the spices, add the spinach and mix again on a low heat.
Other recommendations:
I like to have this with a slice of toast and some veggies. You can also add vegan sausage to your tofu scramble, or any other veggies you like. Feel free to also take out the mushrooms and/or spinach and replace with other veggies. Red peppers, onions, and tomatoes also go really well with this recipe!
